Entry #1 – Tex Mex Black Bean Dip

This is one of my favorite snack foods, easy to throw together and so yummy!

1 (15 oz) can black beans, drained
1 tsp vegetable oil
1/2 c. chopped onion
2 cloves garlic, minced
1/2 c. corn
3/4 c. chopped tomatoes
1/2 c. mild salsa
1-2 tsp cumin
1-2 tsp chili powder
1/2 c. monterey jack cheese
(can omit this if you’d like)
1/4 c. fresh cilantro, chopped
1 tbsp fresh lime juice

In a small frying pan, saute onion and garlic in vegetable oil for 4 minutes. Then in a food processor or blender, throw everything together and blend. Serve with tortilla chips.
Tostitos just came out with an “artisan” black bean and garlic chip, they are really good with this!
